Recipe: vegetarian pecan potato mash

Vegetarian pecan potato mash serves as a healthy alternative to popular Thanksgiving dishes.

Are you having trouble finding food other than turkey for Thanksgiving? This year, you can try vegetarian potato mash, which is delicious and healthy simultaneously. It is so good that even turkey-eaters will love it.

Ingredients:

  • 3-4 pre-cooked sweet potatoes (or yams)
  • ⅓ cup orange juice
  • salt
  • 1 tsp of ginger powder
  • ¼ cup flour
  • ½ cup chopped pecans
  • ⅓ cup maple syrup (or brown sugar)
  • 2 tablespoons vegan margarine
  • cinnamon

Procedures:

  1. Peel the sweet potatoes (or yams) and mash them together with orange juice, ginger powder and a dash of salt.
  2. In a separate bowl, mix flour, pecans, maple syrup and vegan margarine.
  3. Spoon the mixture from step two over the sweet potatoes.
  4. If you would like, you may sprinkle the top with cinnamon and nutmeg.
  5. Bake for 20-25 minutes at 350 degrees.
  6. Let it cool and enjoy the potato mash.
